Longview Farm salami is made from slow growing, heritage breed Berkshire pigs. Considered one of the best tasting breeds of pigs, our Berkshires are rotated through the woods where they can root around for grubs and nuts and whatever they like. They are fed a barley / wheat feed freshly ground at a local Amish feed mill. They grow slower on barley, but are better tasting than if fed a conventional corn / soy feed. We harvest our pigs only after acorn season, so our Berkshires spend their last weeks and months snacking on acorns. They are delicious having had only one bad day in their lives. Their shoulders are then turned into fabulous salami by Meatcrafters, a fine local charcuterie.
