Our 2016 Sparkling Wine, called Le Bubbly, is made from California Chardonnay grapes. Made in the traditional Champagne Method, this Sparkling is barrel fermented and aged for 13 months, then racked and bottled, where secondary fermentation occurred. We let it bottle ferment for nearly 3 years, gently building up a natural carbonation. This sparkling is dry, light, crisp and refreshing, with hints of pear, citrus and apricot.
Our 2020 Ruby Rose is made from Merlot grapes, crushed and cold-soaked for 17 hours, then pressed to give an amazing ruby color. It is made in the classic French style, fermented dry and aged in a neutral French Oak barrel for 5 months. Soft and subtle aroma, hints of tart cherry and a clean, crisp finish. Delicious served slightly chilled, pairs perfectly with Thanksgiving dinner, or your favorite cheese.
We took our barrel-fermented Chardonnay and then we put the last 15 gallons into a new oak whiskey barrel with a heavy char. It sat in the barrel for 2 years, giving it notes of caramel, toffee and vanilla. Is it a wine? Is it a whiskey? Is it a liqueur? One sip may not be enough to answer the question....
Our 2019 Merlot is made from California grapes, fermented completely dry, but the beautiful fruit has an almost sweet quality. Full bodied but gentle tannins, amazing fruit bouquet, and notes of cherry, black currant, dried fruit and hints of pepper. 9 months in French Oak gives this wine an almost cab-like quality, but very smooth and gentle finish. Pairs well with red meat, cheese, holds up well to spicy dishes, and makes a great dessert paired with dark chocolate.
Our 2019 Viognier is made from California grapes, fermented dry and aged for 8 months. It has been in the bottle since the first of August, and it is crisp and refreshing. Pairs nicely with chicken, fish, seafood and and pork, or enjoy a glass by itself. It is one wine that does not need food to compliment it, but you can never go wrong pairing wine with food. It is especially delicious with soft cheeses.
2016 Delightful blend of Cabernet Sauvignon, Cabernet Franc, and Merlot grapes fermented and aged separately for 18 months then blended and aged in neutral French Oak barrels for an additional 18 months. Combined with the perfect amount of sweetness, this wine is a delicious after dinner drink with a piece of dark chocolate or your favorite strong cheese. Everyone should end their evening with this Good Night Kiss!

2018 Pinot Grigio from South African grapes. Soft crisp full mouth feel with hints of citrus, honey dew melon, apple and green grapes. Named Desire. Alcohol Percentage = 12.1%
2016 Chardonnay - Barrel fermented 'Sur Lie' and aged in neutral French oak barrels. This wine has undergone malolactic fermentation as well. Has a nice mouthfeel but not overly oaky or buttery like 'new world' Chardonnays. Grapes from Lodi California. Alcohol percentage = 12.8%
2016 Blend of Cabernet Sauvignon and Merlot grapes fermented and aged separately for 18 months then blended and aged in neutral French Oak barrels for an additional 18 months. The blend is 83% Cabernet Sauvignon and 17% Merlot. Alcohol percentage = 12.1%
2017 Cabernet Sauvignon made from grapes from the Suisun Valley in California (small arid valley just east of Napa). 100% Cabernet Sauvignon, aged 18 months in neutral French oak, bottled in May 2019. 14.2% Alcohol by Volume. Great structure and balance, with long, lingering tannins. Drinkable now, or lay down for a few years. Should continue to improve for the next 5 - 8 years.
