Sweet, ice style-wine. Late Harvest Vidal Blanc has notes of honeysuckle, ripe pear, and melon. Harvested after the first fall frost. Hand-picked on November 11th with a sugar at harvest of 27.8 Brix, this late harvest wine was then cryoextracted to 39.5 Brix. Residual sugar of 22 Brix gives this wine a supple sweetness intertwined with notes of honeysuckle, ripe melons, pears, and vanilla.

Our Profondità is barrel-aged for balanced harmonization of the rich cocoa powder, toasted hazelnuts, and sweet caramel aromas. This wine is fortified by the addition of a neutral grape spirit to stop the fermentation, leaving residual sugar and creating a port-style wine.
